Pasture to Plate

I have been working on a series of images which I am calling "Pasture to Plate". I have followed the journey of two hares from the paddock to finally being plated in a French restaurant. I'll be putting the images in a gallery with a password soon, (some of the images will be too confronting for an open gallery), but in the mean time here is French Chef, Laurent, holding up some caul fat which he is using to roll up some hare fillets with.
